Serving cuisine that draws on a variety of cultural influences from around the world, including Asian, European, Mediterranean , and American. History Our founders, Todd Welker and Chad Everts, were multi-unit (25+) franchisees of other national branded food QSR concepts prior to their mutual idea of testing the concept of a Nothing but Noodles restaurant in Albuquerque , New Mexico in April 2002. Experiencing rapid success, they made a business decision to move to a larger metro area to better test the concept amongst stronger restaurant competition. Scottsdale , Arizona became their new headquarter base for their company Noodles Development LP. As of October 2005, there are 35 restaurants in our Nothing But Noodles system located in 22 states across the US , with an additional 145 under development over the next eight years. The system is truly just beginning, and we welcome experienced full service and QSR restaurant people to join in the journey as we grow this brand to a regional and national presence.
